Vanilla Swiss Meringue Buttercream

Ingredients:
-
6 egg whites
-
1-1/2 cups sugar
-
4 sticks unsalted butter at room temperature
-
1 tsp vanilla extract
-
Pinch of salt
** MAKES ENOUGH FOR A 2 LAYER 6" CAKE
Directions:

Step 1: Add sugar and egg whites to a glass bowl

Step 2: Place glass bowl over a sauce pan of simmering water on stove
-
Step 3: Stir until sugar is dissolved
-
Step 4: Remove bowl from simmering water

Step 5: Pour contents into bowl of stand mixer
-
Step 6: Whisk on high using a "whisk" attachment for 7 minutes or until bowl has cooled down
-
Step 7: Add butter 1 tablespoon at a time until combined

Step 8: Add in vanilla and salt

Step 9: Mix until fully combined
