Vanilla Cake

Ingredients:

  • 2 sticks unsalted butter (1 cup), room temperature

  • 2 cups sugar

  • 2 teaspoons vanilla extract

  • 4 eggs

  • 1 cup whole milk

  • 2 1/2 cups flour

  • 2 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • Vegetable oil spray

Directions:

  • Step 1: Pre-heat oven to 350 F 

  • Step 2: In a medium bowl, whisk together flour, baking powder, salt

  • Step 3: In a stand mixer fitted with paddle attachment, mix butter, sugar & vanilla on medium speed for 8 minutes

  • Step 4: Add in eggs 2 at a time, beating until each addition is mixed in

  • Step 5: Add flour mixture in 4 parts, alternating with milk (add in 1/3 milk at a time)

  • Step 6: Scrape down the bowl and mix 1 more time

  • Step 7: Grease bottom of cake pans with vegetable oil spray (this recipe makes enough for (2) 8 inch cakes or (3) 6 inch cakes

  • Step 8: Place parchment circle at bottom of pans

  • Step 9: Equally divide the batter into pans

  • Step 10: Bake for 40 minutes until a toothpick inserted in center comes out clean

*** *** FOR CUPCAKES, COOK AT SAME TEMP OF 350 DEGREES, 18 - 20 MINUTES
