Colorful Fall Cake

Pumpkin Spice Cake Ingredients:

  • 1-1/4 cups unsalted butter (room temperature)

  • 1/4 cup vegetable oil

  • 2 1/2 cups sugar

  • 1 cup brown sugar

  • 1/4 cup molasses

  • 1- 1/2 tablespoons ground cinnamon

  • 1 tablespoon ground clove

  • 1/2 tablespoon ground nutmeg

  • 1/2 tablespoon ground ginger

  • 5 eggs (room temperature)

  • 1 can (796 mL) pure pumpkin puree 

  • 4 cups flour

  • 1/2 tablespoon baking soda

  • 1-1/2 teaspoons salt

Pumpkin Spice Cake Directions:

  • Step 1: Combine flour, baking soda, salt (set aside)

  • Step 2: In stand mixer add butter, oil, both sugars, molasses

  • Step 3: Mix for 2 minutes

  • Step 4: Add in all spices

  • Step 5: Add in eggs 1 at a time

  • Step 6: Add in 1/4 of dry ingredients & mix until combined

  • Step 7: Add in 1/3 of pumpkin puree & mix until combined

  • Step 8: Repeat dry ingredients & pumpkin puree process another 2X

  • Step 9: Pour into (4) 8 inch cake pans lined with parchment paper

  • Step 10: Bake at 350 degrees for 1 hour

Cake Assembly Directions:

  • Step 1: Level off cakes with "cake leveler" or serrated knife

  • Step 2: Spread buttercream at center of cake board

  • Step 3: Place down 1st layer and frost with white buttercream

  • Step 4: Repeat same steps for 2nd and 3rd layer

  • Step 5: Place 4th cake layer upside down 

  • Step 6: Pile yellow buttercream on top of cake and spread out with an offset spatula

  • Step 7: Place cake in fridge for 20 minutes

  • Step 8: Fill separate piping bags with brown, yellow, and orange frosting, fitted with Wilton 1M tip

  • Step 9: Pipe bursts of yellow, orange, and brown all over cake
