Colorful Fall Cake


Pumpkin Spice Cake Ingredients:

1-1/4 cups unsalted butter (room temperature)

1/4 cup vegetable oil
-
2 1/2 cups sugar
-
1 cup brown sugar
-
1/4 cup molasses
-
1- 1/2 tablespoons ground cinnamon
-
1 tablespoon ground clove
-
1/2 tablespoon ground nutmeg
-
1/2 tablespoon ground ginger
-
5 eggs (room temperature)
-
1 can (796 mL) pure pumpkin puree
-
4 cups flour
-
1/2 tablespoon baking soda
-
1-1/2 teaspoons salt
Other Ingredients:
-
Double batch vanilla American buttercream frosting - CLICK HERE FOR RECIPE (yellow, orange, white, brown)
Pumpkin Spice Cake Directions:
-
Step 1: Combine flour, baking soda, salt (set aside)
-
Step 2: In stand mixer add butter, oil, both sugars, molasses
-
Step 3: Mix for 2 minutes

Step 4: Add in all spices
-
Step 5: Add in eggs 1 at a time
-
Step 6: Add in 1/4 of dry ingredients & mix until combined
-
Step 7: Add in 1/3 of pumpkin puree & mix until combined

Step 8: Repeat dry ingredients & pumpkin puree process another 2X

Step 9: Pour into (4) 8 inch cake pans lined with parchment paper

Step 10: Bake at 350 degrees for 1 hour
Cake Assembly Directions:

Step 1: Level off cakes with "cake leveler" or serrated knife

Step 2: Spread buttercream at center of cake board
-
Step 3: Place down 1st layer and frost with white buttercream

Step 4: Repeat same steps for 2nd and 3rd layer

Step 5: Place 4th cake layer upside down

Step 6: Pile yellow buttercream on top of cake and spread out with an offset spatula

Step 7: Place cake in fridge for 20 minutes

Step 8: Fill separate piping bags with brown, yellow, and orange frosting, fitted with Wilton 1M tip
-
Step 9: Pipe bursts of yellow, orange, and brown all over cake
