Chocolate Cake

Ingredients:

1 cup unsweetened cocoa powder

2-1/2 cups all-purpose flour
-
2 cups sugar
-
1-1/2 teaspoons baking powder
-
1 teaspoon baking soda
-
1 teaspoon salt
-
3 large eggs
-
3/4 cup vegetable oil
-
1/2 cup sour cream
-
2 teaspoons vanilla extract
-
1-1/2 cups water
-
Vegetable oil spray
Directions:

Step 1: Preheat the oven to 350 degrees Fahrenheit.

Step 2: Bring water to a boil in a saucepan.

Step 3: In a medium bowl, whisk together the cocoa powder and hot water
-
Step 4: When fully mixed there should be no lumps. Then set aside.

Step 5: In a large bowl, add flour, sugar, baking powder, baking soda, salt.

Step 6: Whisk together for 1 minute until mixture is fine.

Step 7: Add wet ingredients to dry (oil, eggs, sour cream, vanilla extract)

Step 8: Mix together all ingredients using a whisk (or mixer).

Step 9: Add in chocolate mixture and whisk well.

Step 10: Grease (3) 6" pans or (2) 8" pans with oil spray until fully covered.

Step 11: Spread oil around pans with paper towel and be sure to coat sides.

Step 12: Place parchment rounds on the bottom of the pans.

Step 13: Evenly divide cake batter into pans.

Step 14: Bake 35 - 45 minutes (6 inch cakes take 35-40 minutes, 8 inch take 45-50 minutes)

Step 15: Check to see if cakes are done with a toothpick, if comes out clean then it's done. If not, put back in over for a few more minutes and test again.
*** FOR CUPCAKES, COOK AT SAME TEMP OF 350 DEGREES, 18 - 20 MINUTES
