Chocolate Swiss Meringue Buttercream

Ingredients:

  • 6 egg whites

  • 1-1/2 cups sugar

  • 1/2 cup cocoa powder

  • 4 sticks unsalted butter at room temperature

  • 1 tsp vanilla extract

  • Pinch of salt

** MAKES ENOUGH FOR A 2 LAYER 6" CAKE

Directions:

  • Step 1: Add sugar and egg whites to a glass bowl

  • Step 2: Place glass bowl over a sauce pan of simmering water on stove

  • Step 3: Stir until sugar is dissolved

  • Step 4: Remove bowl from simmering water

  • Step 5: Pour contents into bowl of stand mixer

  • Step 6: Whisk on high using a "whisk" attachment for 7 minutes or until bowl has cooled down

  • Step 7: Add butter 1 tablespoon at a time until combined

  • Step 8: Add in vanilla and salt

  • Step 9:  Sift in cocoa powder

  • Step 10: Mix until fully combined
